• The Foundations (Thailand to New York): Chef Nicky’s journey began with the authentic, vibrant flavors of Thailand. With a dream to share true Thai culinary art with the world, he brought his passion to the competitive kitchens of New York City.
• The Manhattan & Soho Era (Spice NYC & Peep Soho): In New York, Chef Nicky became an integral part of iconic concepts like Spice NYC in Midtown Manhattan and Peep Soho in the heart of Soho. He didn’t just cook; he helped redefine how Americans experienced contemporary Thai food.
• The Chicago Recognition (Sura Thai Bistro): Moving to the Midwest, he established Sura Thai Bistro and Thai Urban Kitchen. His innovative dishes caught the attention of major American media, earning critical acclaim and features in prominent publications like the Chicago Sun-Times.
